Directions
Mashed at 149-151F for the entire 60 mins. I also added 2 Beano tablets in the mash to insure a complete conversion to beta amylase (sugars). **I prefer a dry Kölsch style ale. I also did a 90 min boil to cook off and reduce any possible off flavors (DMS). Using only bittering hops gave the malt flavor and aroma a chance to come through more in the final product. Fermenting this beer with the K-97 required a low temp of 62-64F. Fermentation time was 10 days in primary and 2 weeks in secondary (42-45F). Kegged on 15psi for 8 days at 36-38F.
